Creamy Tomato Soup with Skyr

What you will need...
  • 1 tbsp olive oil
  • ¼ cup onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tbsp tomato paste
  • 14oz. can chopped tomatoes
  • 14oz. can whole peeled tomatoes
  • 2-3 basil leaves, fresh
  • ¼ cup vegetable stock
  • ½ cup plain Skyr, divided
  • 1 tbsp heavy cream
  • ½ tsp cider vinegar
  1. Heat olive oil in a stock pot over medium-high heat.
  2. Add onion and cook for 5 minutes. Add garlic and salt and pepper, and cook for 30 seconds, stirring.
  3. In the meantime, blend chopped tomatoes, whole tomatoes, and basil in a blender.
  4. Add the cooked onions and garlic and blend until smooth.
  5. Transfer the mixture back to the stock pot and set over medium-high heat.
  6. Once the soup is boiling, stir in heavy cream, broth, Skyr, and vinegar. Season to taste with salt and pepper.
  7. Mix until the soup is creamy and well blended. Simmer the soup for 10 minutes.
  8. Serve soup warm, topped with Skyr
