What you will need...
- 1 tbsp olive oil
- ¼ cup onion, diced
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 2 tbsp tomato paste
- 14oz. can chopped tomatoes
- 14oz. can whole peeled tomatoes
- 2-3 basil leaves, fresh
- ¼ cup vegetable stock
- ½ cup plain Skyr, divided
- 1 tbsp heavy cream
- ½ tsp cider vinegar
- Heat olive oil in a stock pot over medium-high heat.
- Add onion and cook for 5 minutes. Add garlic and salt and pepper, and cook for 30 seconds, stirring.
- In the meantime, blend chopped tomatoes, whole tomatoes, and basil in a blender.
- Add the cooked onions and garlic and blend until smooth.
- Transfer the mixture back to the stock pot and set over medium-high heat.
- Once the soup is boiling, stir in heavy cream, broth, Skyr, and vinegar. Season to taste with salt and pepper.
- Mix until the soup is creamy and well blended. Simmer the soup for 10 minutes.
- Serve soup warm, topped with Skyr
