Skyr Stuffed Sweet Potatoes

What you will need...
  • 2 large sweet potatoes
  • 4 tbsp unsalted butter
  • ¼ tsp paprika powder
  • Salt and pepper, to taste
  • 4 slices bacon, cooked and crumbled
  • 4 tbsp plain Skyr
  • Fresh parsley, chopped

To serve with:

  • Fresh salad
  • Crusty bread
  1. Preheat oven to 400F and line baking sheet with parchment paper.
  2. Poke holes all over sweet potatoes with a fork.
  3. Place the potatoes onto the baking sheet and bake for 50-60 minutes.
  4. While the potatoes are cooking, prepare the butter.
  5. Place the butter in a small sauce pot over medium heat. Wait for a few minutes until the butter starts foaming and then it will reach brown color. Strain the butter through the fine mesh sieve. Stir in paprika, salt, and pepper.
  6. To assemble; cut open the sweet potatoes, and mash and fluff the insides a bit. Divide Skyr between the potatoes. Drizzle butter over the Skyr and add bacon.
  7. Serve warm, with fresh salad and crusty bread.
