What you will need...
- 2 large sweet potatoes
- 4 tbsp unsalted butter
- ¼ tsp paprika powder
- Salt and pepper, to taste
- 4 slices bacon, cooked and crumbled
- 4 tbsp plain Skyr
- Fresh parsley, chopped
To serve with:
- Fresh salad
- Crusty bread
- Preheat oven to 400F and line baking sheet with parchment paper.
- Poke holes all over sweet potatoes with a fork.
- Place the potatoes onto the baking sheet and bake for 50-60 minutes.
- While the potatoes are cooking, prepare the butter.
- Place the butter in a small sauce pot over medium heat. Wait for a few minutes until the butter starts foaming and then it will reach brown color. Strain the butter through the fine mesh sieve. Stir in paprika, salt, and pepper.
- To assemble; cut open the sweet potatoes, and mash and fluff the insides a bit. Divide Skyr between the potatoes. Drizzle butter over the Skyr and add bacon.
- Serve warm, with fresh salad and crusty bread.
