Spinach Fruit Salad with Skyr Dressing

What you will need...
  • 2 boneless and skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tsp minced garlic
  • 1 ½ tbsp balsamic vinegar
  • Salt and pepper, to taste
  • 1 ½ cupfresh spinach
  • 1 cup mixed green salad
  • 2 oranges, peeled, segmented
  • 1 cup strawberries, sliced
  • ½ cup blueberries
  • ¼ cup pecan nuts, toasted

For the dressing:

  • ½ tbsp poppy seeds salad
  • ½ cup plain Skyr
  • ½ tbsp honey
  • ½ tbsp apple cider vinegar
  • Salt and pepper, to taste
  1. Make the dressing; in a bowl, whisk all ingredients until fully combined. Set the dressing in the refrigerator while you make the salad.
  2. Marinade the chicken in the balsamic vinegar, olive oil, and garlic for 1 hour. Remove the chicken from the marinade and season with salt and pepper. Grill the chicken over medium heat for 5-7 minutes per side or until the chicken is cooked through.
  3. Set the chicken aside to cool slightly.
  4. Toss spinach, mixed green, strawberries, oranges, blueberries, and pecans in a bowl. Add chicken and pour over the prepared dressing.
  5. Toss gently to combine and serve.
