What you will need...
- 2 boneless and skinless chicken breasts
- 2 tbsp olive oil
- 2 tsp minced garlic
- 1 ½ tbsp balsamic vinegar
- Salt and pepper, to taste
- 1 ½ cupfresh spinach
- 1 cup mixed green salad
- 2 oranges, peeled, segmented
- 1 cup strawberries, sliced
- ½ cup blueberries
- ¼ cup pecan nuts, toasted
For the dressing:
- ½ tbsp poppy seeds salad
- ½ cup plain Skyr
- ½ tbsp honey
- ½ tbsp apple cider vinegar
- Salt and pepper, to taste
- Make the dressing; in a bowl, whisk all ingredients until fully combined. Set the dressing in the refrigerator while you make the salad.
- Marinade the chicken in the balsamic vinegar, olive oil, and garlic for 1 hour. Remove the chicken from the marinade and season with salt and pepper. Grill the chicken over medium heat for 5-7 minutes per side or until the chicken is cooked through.
- Set the chicken aside to cool slightly.
- Toss spinach, mixed green, strawberries, oranges, blueberries, and pecans in a bowl. Add chicken and pour over the prepared dressing.
- Toss gently to combine and serve.
