What you will need...
  • 1 8oz. can tuna, packed in water, drained
  • 2 cups mixed greens salad, like arugula, watercress, lettuce
  • 0.75lb. cooked and cooled potatoes
  • 1 spring onion, thinly sliced

For the dressing:

  • 1/3 cup plain Skyr
  • 1 tbsp mayonnaise
  • Salt and pepper, to taste
  • ½ lemon, zest and juice
  • 1 tsp Italian herbs
  1. Make the dressing; combine the dressing ingredients in a bowl. Set aside.
  2. Make the salad; chop or sliced the cooled and peeled potatoes.
  3. In a large bowl, toss together the mixed greens salad, potatoes, tuna, and spring onions.
  4. Add the prepared dressing and toss the salad before serving.

NOTE: for this recipe use Golden Yukon potatoes. Wash the potatoes and add them to a pot filled with water. Bring to a boil and cook the potatoes until fork tender. Drain the potatoes and allow them to cool before peeling and slicing.
