What you will need...
- 1 8oz. can tuna, packed in water, drained
- 2 cups mixed greens salad, like arugula, watercress, lettuce
- 0.75lb. cooked and cooled potatoes
- 1 spring onion, thinly sliced
For the dressing:
- 1/3 cup plain Skyr
- 1 tbsp mayonnaise
- Salt and pepper, to taste
- ½ lemon, zest and juice
- 1 tsp Italian herbs
- Make the dressing; combine the dressing ingredients in a bowl. Set aside.
- Make the salad; chop or sliced the cooled and peeled potatoes.
- In a large bowl, toss together the mixed greens salad, potatoes, tuna, and spring onions.
- Add the prepared dressing and toss the salad before serving.
NOTE: for this recipe use Golden Yukon potatoes. Wash the potatoes and add them to a pot filled with water. Bring to a boil and cook the potatoes until fork tender. Drain the potatoes and allow them to cool before peeling and slicing.
