What you will need...
For the dressing:
- ¼ cup Skyr
- 2 tbsp freshly grated parmesan cheese
- 1 clove garlic, minced
- 1 tbsp capers, chopped
- 1 tsp Dijon mustard
- Salt and pepper, to taste
- ½ lemon, zest, and juice
For the salad:
- 2 cups mixed greens salad
- 0.5lb. shrimps, peeled, deveined
- Salt and pepper, to taste
- ½ tbsp olive oil
Additional:
- Seasoned bread croutons
- Hardboiled eggs, optional
- Make the dressing; in a mini blender, blend all the ingredients until smooth. Set aside.
- Cook the shrimp; preheat the skillet over medium-high heat. Toss the shrimp with olive oil, salt, and pepper. Cook the shrimp in skillet for 2-3 minutes per side.
- To serve: in a large bowl, toss the salad greens with dressing, shrimp, and bread croutons. Add eggs, if using, and serve.
NOTE: eggs will give you extra protein, but they are not mandatory. If you do not have bread croutons, simply, toss 2 cubed slices of French bread, with olive oil, salt, pepper, and Italian herbs. Bake the croutons in oven at 400F for 6-8 minutes
