Skyr-Caesar Salad with Shrimp

What you will need...

For the dressing:

  • ¼ cup Skyr
  • 2 tbsp freshly grated parmesan cheese
  • 1 clove garlic, minced
  • 1 tbsp capers, chopped
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • ½ lemon, zest, and juice

For the salad:

  • 2 cups mixed greens salad
  • 0.5lb. shrimps, peeled, deveined
  • Salt and pepper, to taste
  • ½ tbsp olive oil

Additional:

  • Seasoned bread croutons
  • Hardboiled eggs, optional
  1. Make the dressing; in a mini blender, blend all the ingredients until smooth. Set aside.
  2. Cook the shrimp; preheat the skillet over medium-high heat. Toss the shrimp with olive oil, salt, and pepper. Cook the shrimp in skillet for 2-3 minutes per side.
  3. To serve: in a large bowl, toss the salad greens with dressing, shrimp, and bread croutons. Add eggs, if using, and serve.

NOTE: eggs will give you extra protein, but they are not mandatory. If you do not have bread croutons, simply, toss 2 cubed slices of French bread, with olive oil, salt, pepper, and Italian herbs. Bake the croutons in oven at 400F for 6-8 minutes
