What you will need...
- 8oz. bacon, cooked and crumbled
- 1 cup broccoli florets, chopped
- ½ cup red belle pepper, seeded, chopped
- 6 large eggs
- 6oz. Plain Skyr
- Salt and pepper, to taste
- ¼ Cup freshly grated parmesan + extra for sprinkling
- Preheat oven to 350F. Grease a 12-hole muffin tin with cooking oil or use a silicone muffin tin.
- Heat a large skillet over medium-high heat and spray it with some cooking oil.
- Add broccoliand bell peppers. Cook, stirring for 2-3 minutes. Season to taste with salt and pepper.
- Beat eggs, Skyr, and salt and pepper in a bowl.
- Stir in bacon, broccoli, bell peppers, and Parmesan.
- Divide the mixture between muffin tin.Sprinkle some extra Parmesan on top of the egg bites.
- Bake for 12-15 minutes.
- Cool the egg bites before removing them from the muffin tin.
- Serve the egg bites with some extra Skyr on the side and fresh salad.
