What you will need...
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • ½ tbsp sugar

For the filling:

  • 12oz. Cream cheese
  • 1 ½ cup Skyr, plain, or Vanilla
  • ¼ cup heavy cream
  • 3 tbsp honey
  • 1 tbsp vanilla extract
  1. Make the crust; line 3 mini or one regular springform with parchment paper, bottom, and sides.
  2. Blitz the cracker crumbs until ground finely. Combine the crumbs with butter and sugar and stir well. Divide the mixture into 3 parts and press into spring forms or one regular springform.
  3. Set in a fridge.
  4. Make the filling; beat cream cheese with Skyr, honey, and vanilla.
  5. In a separate bowl, whisk heavy cream until stiff peaks form. Fold the heavy cream into the Skyr base. Divide the filling among spring forms or use in just one regular size.
  6. Refrigerate the cheesecake for 4 hours.
  7. Serve with fresh blueberries or desired berries on top and enjoy.

NOTE: You can use any flavored Skyr for this cake.
