What you will need...
  • 1 cup flour
  • 172 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup unsalted butter, softened
  • 2/3 cup sugar
  • 2 medium eggs
  • ¾ cup Skyr

For topping:

  • 1 cup blueberries
  • 2 tbsp sugar
  1. Preheat oven to 375F.
  2. Line a 9-inch springform with parchment paper, bottom, and sides.
  3. In a bowl, sift flour, baking powder, and baking soda. In a separate bowl, beat butter with sugar and eggs.
  4. Fold in Skyr and add the flour. Stir until combined.
  5. Transfer the cake batter to the springform pan.
  6. Bake the cake for 25-30 minutes.
  7. For the topping, gently mash half of the blueberries with the sugar.
  8. While the cake is still hot, top it with the mashed blueberries. Let the cake cool completely before removing it from the spring form.
  9. Top the cake with remaining blueberries and serve.

NOTE: you can incorporate blueberries into the batter. Make sure you dust them with starch beforeadding into the batter, as they may sink. Also, good option is justto scatter them on top of thesurface of the cake batter before baking.
