What you will need...
- 2x 4oz.sea bass fillets
- 0.75lb. waxy potatoes
- 1 clove garlic
- Salt and pepper, to taste
- ¼ cup plain Skyr
- 1 tbsp capers
- Olive oil, as desired
- Preheat oven to 425F. Peel and cut the potatoes into bite-sized pieces.
- Toss the potatoes with some olive oil and season them to taste with salt and pepper.
- Place the potatoes onto a baking sheet and bake for 25-30 minutes.
- In the meantime, finely chop garlic and capers. Combine the garlic and capers with Skyr and season to taste with salt and pepper. Set aside.
- Prepare the sea bass; season the sea bass with salt.
- Heat some olive oil in a skillet. Cook the sea bass, skin side down for 5 minutes. Flip and cook for 1 minute more.
- To serve; serve sea bass with potatoes and Skyr on top.
