Seabass with Caper Skyr Sauce and Roasted Potatoes

What you will need...
  • 2x 4oz.sea bass fillets
  • 0.75lb. waxy potatoes
  • 1 clove garlic
  • Salt and pepper, to taste
  • ¼ cup plain Skyr
  • 1 tbsp capers
  • Olive oil, as desired

  1. Preheat oven to 425F. Peel and cut the potatoes into bite-sized pieces.
  2. Toss the potatoes with some olive oil and season them to taste with salt and pepper.
  3. Place the potatoes onto a baking sheet and bake for 25-30 minutes.
  4. In the meantime, finely chop garlic and capers. Combine the garlic and capers with Skyr and season to taste with salt and pepper. Set aside.
  5. Prepare the sea bass; season the sea bass with salt.
  6. Heat some olive oil in a skillet. Cook the sea bass, skin side down for 5 minutes. Flip and cook for 1 minute more.
  7. To serve; serve sea bass with potatoes and Skyr on top.
