What you will need...
- 3 cups mixed salad greens
- 4 slices prosciutto di Parma
- 8 green olives, studded with pepper
- ¼ cup chopped tomatoes, seeded
- 2 hard-boiled eggs, cut into quarters
For dressing:
- 4 tbsp Skyr
- 1-2 tbsp extra-virgin olive oil
- 1-2 tbsp lemon juice
- Salt and pepper, to taste
- Add mixed greens into the bowl.
- Add prosciutto, olives, tomatoes, and eggs.
- Make the dressing; whisk all the dressing ingredients in a small bowl.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately.
NOTE: for the perfect hardboiled eggs, add eggs to the saucepot. Cover them with water. Bringthe water to a rolling boil. Remove the saucepot from the heat and coverwith the lid. Let theeggs rest for 10-12 minutes. This will cook them up perfectly every time.
