Prosciutto Egg Salad with Skyr Dressing

What you will need...
  • 3 cups mixed salad greens
  • 4 slices prosciutto di Parma
  • 8 green olives, studded with pepper
  • ¼ cup chopped tomatoes, seeded
  • 2 hard-boiled eggs, cut into quarters

For dressing:

  • 4 tbsp Skyr
  • 1-2 tbsp extra-virgin olive oil
  • 1-2 tbsp lemon juice
  • Salt and pepper, to taste
  1. Add mixed greens into the bowl.
  2. Add prosciutto, olives, tomatoes, and eggs.
  3. Make the dressing; whisk all the dressing ingredients in a small bowl.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately.

NOTE: for the perfect hardboiled eggs, add eggs to the saucepot. Cover them with water. Bringthe water to a rolling boil. Remove the saucepot from the heat and coverwith the lid. Let theeggs rest for 10-12 minutes. This will cook them up perfectly every time.
