What you will need...
- 1 cup cooked chickpeas
- ¼ cup Plain Skyr
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper, to taste
- ¼ cup diced cucumber
- 2 tbsp diced red onion
- 2 cherry tomatoes,halved
- Chopped parsley or basil, optional
- Marinate chickpeas with lemon juice, olive oil, and salt and pepper, to taste, for 15 minutes.
- Add Skyr to a bowl.
- Top it with chickpeas, cucumber, onions, and soaking chickpea liquid.
- Add cherry tomatoes on top and fresh herbs if using.
- Serve.
