Mediterranean Chickpeas with Skyr

What you will need...
  • 1 cup cooked chickpeas
  • ¼ cup Plain Skyr
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • ¼ cup diced cucumber
  • 2 tbsp diced red onion
  • 2 cherry tomatoes,halved
  • Chopped parsley or basil, optional
  1. Marinate chickpeas with lemon juice, olive oil, and salt and pepper, to taste, for 15 minutes.
  2. Add Skyr to a bowl.
  3. Top it with chickpeas, cucumber, onions, and soaking chickpea liquid.
  4. Add cherry tomatoes on top and fresh herbs if using.
  5. Serve.
