What you will need...
- 2 artichokes
- 1 tbsp olive oil
- ½ tbsp lemon juice
For the aioli:
- 1 clove garlic, minced
- ½ cup Plain Skyr
- 2 tbsp mayonnaise
- ½ tbsp whitewine vinegar
- Salt, to taste
- Trim the artichoke ends and rinse the artichokes.
- Fill the pot with water. Bring the water to a boil.
- Add artichokes into the water and reduce heat. Simmer the artichokes for 10 minutes.
- Drain the artichokes and once cold enough to handle cut them in half by length.
- Preheat your electric grill to medium-high. Combine olive oil and lemon juice and brush the artichokes.
- Grill the artichokes for 5-7 minutes per side.
- Make the aioli; combine the aioli ingredients in a bowl and refrigerate for 15 minutes.
- To serve; serve grilled artichokes with chilled Skyr aioli.
