Grilled Artichokes with Garlic Skyr Sauce

What you will need...
  • 2 artichokes
  • 1 tbsp olive oil
  • ½ tbsp lemon juice

For the aioli:

  • 1 clove garlic, minced
  • ½ cup Plain Skyr
  • 2 tbsp mayonnaise
  • ½ tbsp whitewine vinegar
  • Salt, to taste
  1. Trim the artichoke ends and rinse the artichokes.
  2. Fill the pot with water. Bring the water to a boil.
  3. Add artichokes into the water and reduce heat. Simmer the artichokes for 10 minutes.
  4. Drain the artichokes and once cold enough to handle cut them in half by length.
  5. Preheat your electric grill to medium-high. Combine olive oil and lemon juice and brush the artichokes.
  6. Grill the artichokes for 5-7 minutes per side.
  7. Make the aioli; combine the aioli ingredients in a bowl and refrigerate for 15 minutes.
  8. To serve; serve grilled artichokes with chilled Skyr aioli.
