Skyr Stuffed Crepes

What you will need...
  • 3 large eggs
  • 1 cup milk
  • ½ cup sparkling water
  • 1 cup flour
  • 2 tbsp unsalted butter, melted

For the filling:

  • 1 ½ cups Blueberry flavored Skyr
  • ¼ tsp vanilla extract
  • ¼ cup fresh blueberries
  • 2 tbsp honey
  1. Make the crepes; add the crepes ingredients in a food blender.
  2. Blend until smooth and lump free. If you do get some limps, strain the crepe batter through the fine mesh sieve.
  3. Let the batter stand for 10-15 minutes at room temperature.
  4. Heat a 10-inch non-stick crepe skillet over medium-high heat. Pour in 1/3 cup of the crepe batter and immediately rotate and swirl the pan so the skillet is completely covered with the batter.
  5. Cook the crepe for 45-50 seconds and flip gently.
  6. Cook for another 20 seconds. Transfer the crepe to a large plate, covered with parchment paper. Continue to make the remaining crepes.
  7. Make the filling; blend blueberries and honey in a food blender.
  8. Combine with Skyr.
  9. Fill the crepes with the prepared yogurt, fold and serve.
