What you will need...
- 3 large eggs
- 1 cup milk
- ½ cup sparkling water
- 1 cup flour
- 2 tbsp unsalted butter, melted
For the filling:
- 1 ½ cups Blueberry flavored Skyr
- ¼ tsp vanilla extract
- ¼ cup fresh blueberries
- 2 tbsp honey
- Make the crepes; add the crepes ingredients in a food blender.
- Blend until smooth and lump free. If you do get some limps, strain the crepe batter through the fine mesh sieve.
- Let the batter stand for 10-15 minutes at room temperature.
- Heat a 10-inch non-stick crepe skillet over medium-high heat. Pour in 1/3 cup of the crepe batter and immediately rotate and swirl the pan so the skillet is completely covered with the batter.
- Cook the crepe for 45-50 seconds and flip gently.
- Cook for another 20 seconds. Transfer the crepe to a large plate, covered with parchment paper. Continue to make the remaining crepes.
- Make the filling; blend blueberries and honey in a food blender.
- Combine with Skyr.
- Fill the crepes with the prepared yogurt, fold and serve.
