What you will need...

For the crepes:

  • ½ cup sparkling water
  • 1 cup milk
  • 4 eggs
  • 4 tbsp butter, melted and cooled
  • 1 cup flour
  • 2 tbsp sugar

For the filling:

  • 1 cup Vanilla Skyr
  • ½ cup jarred lemon curd
  • 16oz. whipped topping, thawed
  1. Make the crepes; in a food blender add all the ingredients. Blend until smooth.
  2. Heat a 9-inch skillet over medium-high heat. Grease the skillet with some cooking oil.
  3. Pour in 3 tbsp of the pancake batter and swirl the batter to cover the bottom. Cook the pancake for 3 minutes per side. Transfer the pancake on to a cooling rack. Repeat the process with the remaining batter.
  4. Make the filling; in a large bowl, mix Vanilla Skyr with whipped topping and lemon curd.
  5. To assemble; place a crepe on a cake stand or a large plate.
  6. Add 3 tbsp of the filling and spread it evenly over the pancake. Add the second pancake and filling. Repeat until you use all the ingredients.
  7. Refrigerate the cake for 1 hour.
  8. Garnish with some berries before serving.
