What you will need...
For the crepes:
- ½ cup sparkling water
- 1 cup milk
- 4 eggs
- 4 tbsp butter, melted and cooled
- 1 cup flour
- 2 tbsp sugar
For the filling:
- 1 cup Vanilla Skyr
- ½ cup jarred lemon curd
- 16oz. whipped topping, thawed
- Make the crepes; in a food blender add all the ingredients. Blend until smooth.
- Heat a 9-inch skillet over medium-high heat. Grease the skillet with some cooking oil.
- Pour in 3 tbsp of the pancake batter and swirl the batter to cover the bottom. Cook the pancake for 3 minutes per side. Transfer the pancake on to a cooling rack. Repeat the process with the remaining batter.
- Make the filling; in a large bowl, mix Vanilla Skyr with whipped topping and lemon curd.
- To assemble; place a crepe on a cake stand or a large plate.
- Add 3 tbsp of the filling and spread it evenly over the pancake. Add the second pancake and filling. Repeat until you use all the ingredients.
- Refrigerate the cake for 1 hour.
- Garnish with some berries before serving.
