What you will need...
- 1 large boneless and skinless chicken breast, cooked
- ¼ cup sliced almonds
- ½ cup plain Skyr
- ½ apple, peeled, cored, chopped
- 2 tbsp mayonnaise
- ½ tbsp Dijon mustard
- 1 stalk celery, chopped
- ½ lemon juice
- Salt and pepper, to taste
- Chopped parsley, for garnish, optional
- Toasted bread slices, to serve with
- Cut the chicken into ½-inch pieces.
- Prepare the rest of the ingredients.
- Combine all the ingredients in a large bowl and give it a good stir.
- Refrigerate the salad for 30 minutes before serving.
NOTE: to cook the chicken, place the chicken into a sauce pot and cover it with 1 inch of water.Season the water with salt. Bring the water to a boil and reduce the heat. Simmer the chicken for 10-12 minutes or until cooked through
