What you will need...
  • 1 large boneless and skinless chicken breast, cooked
  • ¼ cup sliced almonds
  • ½ cup plain Skyr
  • ½ apple, peeled, cored, chopped
  • 2 tbsp mayonnaise
  • ½ tbsp Dijon mustard
  • 1 stalk celery, chopped
  • ½ lemon juice
  • Salt and pepper, to taste
  • Chopped parsley, for garnish, optional
  • Toasted bread slices, to serve with
  1. Cut the chicken into ½-inch pieces.
  2. Prepare the rest of the ingredients.
  3. Combine all the ingredients in a large bowl and give it a good stir.
  4. Refrigerate the salad for 30 minutes before serving.

NOTE: to cook the chicken, place the chicken into a sauce pot and cover it with 1 inch of water.Season the water with salt. Bring the water to a boil and reduce the heat. Simmer the chicken for 10-12 minutes or until cooked through
