What you will need...
- Make the pancakes; in a food blender, add all the pancake ingredients. Blend until smooth.
- Heat a large non-stick skillet over medium-high heat. Coat the skillet with cooking spray.
- Add ¼ cup of the batter into the skillet. Cook for 4-5 minutes over medium heat. Carefully flip the pancake and cook until cooked through.
- Make the topping; combine the Skyr, Harissa, salt, lemon juice, and garlic powder in a bowl until smooth.
- To serve; serve chickpea pancakes with Skyr harissa on top and with desired veggies on the side.
- 1 cup chickpea flour
- ½ tsp garlic powder
- Salt and pepper, to taste
- ½ tsp baking powder
- 1 good pinch of red pepper flakes
- 1 cup water
- ¼ cup plain Skyr
To serve with:
- ½ cup plain Skyr
- ½ tbsp extra virgin olive oil
- 2 tsp tbsp Harissa
- 2 tsp lemon juice
- Salt, to taste
- ¼ tsp garlic powder
Extra for serving:
- Sliced avocado, cherry tomatoes
