Chickpea Pancakes topped with Harissa Skyr

What you will need...
  1. Make the pancakes; in a food blender, add all the pancake ingredients. Blend until smooth.
  2. Heat a large non-stick skillet over medium-high heat. Coat the skillet with cooking spray.
  3. Add ¼ cup of the batter into the skillet. Cook for 4-5 minutes over medium heat. Carefully flip the pancake and cook until cooked through.
  4. Make the topping; combine the Skyr, Harissa, salt, lemon juice, and garlic powder in a bowl until smooth.
  5. To serve; serve chickpea pancakes with Skyr harissa on top and with desired veggies on the side.
  • 1 cup chickpea flour
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • ½ tsp baking powder
  • 1 good pinch of red pepper flakes
  • 1 cup water
  • ¼ cup plain Skyr

To serve with:

  • ½ cup plain Skyr
  • ½ tbsp extra virgin olive oil
  • 2 tsp tbsp Harissa
  • 2 tsp lemon juice
  • Salt, to taste
  • ¼ tsp garlic powder

Extra for serving:

  • Sliced avocado, cherry tomatoes
