What you will need...
For the Skyr spread:
- ½ cup Plain Skyr
- 2 tsp lemon zest
- 2 tsp lemon juice
- Salt and pepper, to taste
For the toast:
- 1 small multigrain baguette, cut in half bylength
- 4oz. Thinly sliced smoked salmon
- ¼ cup microgreens, radishes, or broccoli
- Freshly ground black pepper, as desired
- Black sesame seeds, for garnish
- 2 tbsp small capers
- Make the Skyr spread; in a small bowl, combine Skyr, lemon zest, lemon juice, and salt and pepper.
- Toast the baguette in a toaster until crispy. Let it cool down a bit.
- Spread the Skyr over the baguette and top with salmon, micro green, capers, and sesame seeds.
- Season the toast with freshly ground black pepper and serve.
NOTE: You can add a few slices of cucumbers for some extra crunch. Also, basil and dill pair well with the salmon.
