Breakfast Toast with Skyr and Smoked Salmon

What you will need...

For the Skyr spread:

  • ½ cup Plain Skyr
  • 2 tsp lemon zest
  • 2 tsp lemon juice
  • Salt and pepper, to taste

For the toast:

  • 1 small multigrain baguette, cut in half bylength
  • 4oz. Thinly sliced smoked salmon
  • ¼ cup microgreens, radishes, or broccoli
  • Freshly ground black pepper, as desired
  • Black sesame seeds, for garnish
  • 2 tbsp small capers
  1. Make the Skyr spread; in a small bowl, combine Skyr, lemon zest, lemon juice, and salt and pepper.
  2. Toast the baguette in a toaster until crispy. Let it cool down a bit.
  3. Spread the Skyr over the baguette and top with salmon, micro green, capers, and sesame seeds.
  4. Season the toast with freshly ground black pepper and serve.

NOTE: You can add a few slices of cucumbers for some extra crunch. Also, basil and dill pair well with the salmon.
