What you will need...
- 1 tbsp olive oil
- 1 onion, chopped
- 0.25lb. ground lean beef
- 1 tbsp chipotle paste
- ½ tbsp Cajun seasoning
- 30oz. can red beans, rinsed, drained
- 1 cup canned corn,rinsed, drained
- ½ cup beef stock
- 1 ½ cups water
- 24oz. can chopped tomatoes
- 1 tsp cacao powder
For topping:
- ½ cup plain Skyr
- Chopped coriander or parsley
- In a Dutch oven, heat olive oil.
- Add onions and cook, stirring, for 5 minutes.
- Add the beef and season to taste with salt and pepper. Cook the beef, breaking the lumps, until the beef is browned.
- Add chipotle and Cajun seasoning. Add beef stock and simmer for 5 minutes.
- Add beans and tomatoes and water. Simmer the chili for 30 minutes or until thickened. Add cocoa powder and cook for 5 minutes more.
- Serve warm chili, topped with Skyr, chopped coriander, or parsley.
