Beef Chili with Skyr

What you will need...
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 0.25lb. ground lean beef
  • 1 tbsp chipotle paste
  • ½ tbsp Cajun seasoning
  • 30oz. can red beans, rinsed, drained
  • 1 cup canned corn,rinsed, drained
  • ½ cup beef stock
  • 1 ½ cups water
  • 24oz. can chopped tomatoes
  • 1 tsp cacao powder

For topping:

  • ½ cup plain Skyr
  • Chopped coriander or parsley
  1. In a Dutch oven, heat olive oil.
  2. Add onions and cook, stirring, for 5 minutes.
  3. Add the beef and season to taste with salt and pepper. Cook the beef, breaking the lumps, until the beef is browned.
  4. Add chipotle and Cajun seasoning. Add beef stock and simmer for 5 minutes.
  5. Add beans and tomatoes and water. Simmer the chili for 30 minutes or until thickened. Add cocoa powder and cook for 5 minutes more.
  6. Serve warm chili, topped with Skyr, chopped coriander, or parsley.
